American Vanilla Cupcake

This is my personal favorite Vanilla Cupcake.

It's moist and goes well with any frosting. I hope you like it.

American Vanilla Cupcake recipe with step by step instructions

Ingredients :

110 gm Cake flour

80 gm Plain flour

1 level Tablepoon of Baking powder

175 gm fine granulated sugar (i used Golden Castor Sugar)

1/2 level teaspoon of Salt

115 gm Butter, at room temperature

2 large eggs (about 65gm each weight with shell)

100 gm Full cream milk

1 teaspoon Vanilla Extract

Makes about 13 standard size cupcakes

Preheat oven to 170'c normal oven or 160'c fan oven.

Line cupcake pans with paper liners and set aside.

Combine full cream milk, eggs and Vanilla extract into a bowl or measuring jug. Whisk this liquid mixture lightly with a small balloon whisk/fork untill just combined

Combine flours, sugar, baking powder and salt on a large mixing bowl.

Mix on lowest speed until well combined.

Add in the butter and mix on lowest speed until mixture resembles bread crumbs consistency. Stop the mixer. Note: this whisking process will take less then a minute only!

Pour in half of the milk mixture ....
Important note : To avoid overmixing the batter. For this step I would suggest you add in all the milk mixture into the flour. Then whisk on lowest speed until the mixture just combined. Increase the mixer speed to 2 and continue to whisk until smooth and slightly fluffy (this whisking process should take only less then a minute). Remember to scape the side of the bowl with a rubber spatula to ensure that everything is mixed thoroughly.

Whisk on speed 2 until the flours just incoparated with the milk mixture. Note: this process will take only few seconds !

Scrape down the sides of the bowl and pour in the remaining milk mixture and continue to whisk on the same speed until mixture become smooth and slighly fluffy. Stop the mixer.
Carefull not to over whisked the batter!

Batter whisked till smooth and slightly fluffy.

Divide batter evenly among liners, filling about 1/2 full.

Bake at preheated oven for about 25- 27 minutes or untill the surface just slightly brown and cooked. Baking time may vary depending on individual ovens..
Transfer cupcake pan to a wire rack and let it sit for 1 minute. Carefully remove cupcake from its pan and cool on wire rack.

Once cupcakes have cooled, frost tops of each cupcake with your favorite frosting.
Serve at room temperature.

Vanilla Cupcake with lemon frosting

Yummy and easy Vanilla frosting

170gm Icing sugar, sifted

225 gm Butter, soften at room temperature

1 teaspoon Vanilla extract or Lemon extract + zest of a large lemon

2 tablespoons whipping cream

Mix together icing sugar and soften butter.

With a handheld mixer, mix on lowest speed until well blended and then increase to medium speed and beat for another 3 minutes. Scape the side of the mixing bowl in between mixing time.

Add in vanilla or lemon extract and whipping cream and continue to beat on medium speed for 1 minute until a spreadable consistency.

I wasn't confident enough to slice the moist chocolate sponge into three layers, because my cake knife is not long enough and furthermore this cake is huge(10 inch) !

The cake raised well and got a bit cracked on top. But when it has cooled down,it was a little bit wet in the middle ! Next time i shall try to bake this moist chocolate sponge on a swiss roll pan

A fragrant , soft and very moist Steamed Horlick Cake

Ingredients :

250 gm Butter , room temperature
120 gm Castor Sugar

5 Eggs (S or M)

1 tsp Vanilla extract

Mix together 120gm Condensed Milk with 50gm Pandan Kaya , keep aside.

70 gm Horlick
130 gm Plain flour )
1 tsp Baking Powder ) Sift togerher

Method :

Get ready a steamer filled with enough water and preheat at medium high fire .

Line and grease a 8 inch round pan

Cream butter and sugar at high speed till light and fluffy (about 3 or 4 mins)

Add in one egg at a time and continue to cream till well blended

At low speed add in Vanilla extract and blend well

Still at low speed add in the condensed milk mixture and blend till mixture smooth

Stop the machine and fold in the horlick and sifted flour , stir with a spatula till well blended and smooth

Spoon the batter into cake pan and cover the top losely with a piece of aluminuin foil

Steam at medium high fire for 50 till 60 mins

Cook cake on wire rack before cut into pieces and serve

I have modified the original recipes from Chef Noraini Zakaria cookbook

For Steamed Strawberry Horlick Cake : substitute Vanilla extract with 1 tsp Strawberry paste and Pandan Kaya with 50gm of Strawberry Jam (mix with Condensed milk)

Classic Baked Cheesecake

Say the word 'Cheesecake' and most people will sigh with pleasure and start to recall their favorites.

My favorite Cheesecake is the Classic Vanilla Cheesecake,this is the real thing ! a dense,rich and moist cheesecake with a biscuits base.

Here's the recipe for my Classic Vanilla Cheesecake............

Biscuits base :
200 gm Digestive biscuits , blend in a food processor until fine
50 gm Ground almond
120 gm Butter,melted

Mix all above ingredients until well combined.
Press evenly in the bottom of a 9 inch lined springform pan ,then wrap pan with foil (to prevent water leaking)
Keep in fridge till needed

Filling :
600 gm Cream Cheese,room temperature (for Dutch resident please use MonChou verse roomkaas 6 x 100gm)
100 gm Butter,room temperature
1 tsp Vanilla Extract
70 gm Sugar
2 tsp Lemon zest
30 gm Corn flour
2 Eggs (M)
2 egg yolks
300 ml UHT Whipping cream mix with 2 Tbsp Lemon juice OR 300 ml Sour cream

2 egg whites
60 gm Sugar

Position the oven rack in the lowest of the oven and preheat to 140'c
Place cream cheese,butter,vanilla extract and sugar in a mixing bowl and beat till creamy (about 2 or 3 minutes)
Add in lemon zest,corn flour and eggs and continue beat until just combined !
Add in whipping cream or sour cream(if use) and beat till well combined
In another bowl whisk egg whites and sugar till soft peak form.
Slowly stir in the egg whites into the cream cheese batter till well blended - careful not to over stirred the batter !
Pour batter onto prepared pan and steam bake for 2 hours
After 2 hours switch off the oven and leave the door ajar for 15 mintues.
Remove cheesecake from oven and carefully run a sharp knife along the side of cake
Leave cheesecake cool in pan at room temperature before placing in the fridge.
You may brush some glazing on cake surface if desire

NOTE : That said,baked cheesecake is always best served with black coffee ! Hmmm........

1.5 kg Plain flour

33 gm Instant yeast

75 gm Marjerin

120 gm Castor sugar

1 1/2 large eggs

45 gm Milk powder

15 gm Salt

15 gm bread softener/improver

140 gm shortening

7.5 gm baking powder

750 gm tap water (weigh the water to 750 gm)

1 tablespoon Ovalette

Method:

Mix all ingredients except the shortening and marjerin into a mixing bowl and knead till a sticky dough is form, add in the shortening and marjerin and continue kneading till a smooth non stick dough is form.

Take the dough out and rest for 5 minutes

Roll the dough out on a floured surface into 1.5cm thickness and cut with a doughnuts cutter

Place doughnuts in a floured baking tray and lightly sprinkle some flour on top,then prove for about 1 1/2 hours or till double in sizes.

Fried doughnuts in low fire(turn frequently) till light golden colour

Coat with castor sugar.

Serve warm or cool
